I had a request to make birthday cupcakes for a friend of Michael's.
After going back and forth on the flavor we finally decided on - cookies and cream cupcakes.
Basically a white cake with crushed Oreo cookies mixed in to the batter. As a unexpected surprise an Oreo cookie half is added to the bottom of the cupcake.
I went a little fancy with the icing, just rolling the sides in the crushed Oreo cookies - after all these were birthday cupcakes, not just everyday cupcakes.
And they tasted as good as they look - they had rave reviews.
